Tasting Notes

Zesty citrus. Crushed spices. A sudden burst of tropical berries and sweet melon. A soft, creamy wheat mouthfeel that vanishes into a bone-dry, crisp finish.

The Lore

While Silence was the first beer to hit the fermenter, Bière Pacifique was the very first concept born alongside Eternal Night itself.

A tribute to the brewers’ homeland, it draws heavy inspiration from the soft, drinkable, fruity ales of Australia’s pacific coast. Yet, it was crafted to incorporate elements from the deep lexicon of traditional Belgian brewing.

As it happens, Pacific Ale and Belgian Wit share a common soul: an ale that finishes dry and crisp for easy drinkability, anchored by the soft, creamy mouthfeel of wheat and oats.

The Process

Built on a sturdy foundation of Maris Otter Pale malt, Torrified Wheat, and flaked oats. We mash low to facilitate aggressive attenuation, stripping away residual sugars to ensure a bone-dry finish.

For the Pacific twist, Australian-grown Ella and Enigma hops are dropped into the whirlpool at cooler temperatures—extracting minimal bitterness while flooding the wort with volatile tropical flavor and aroma oils.

Fermented with a classic Belgian Wit strain for vibrant ester spice, and finished with a heavy dry-hop of Ella and Enigma for a final, bright tropical character.
