The Lore

Gare Baltique (or, Baltic Station), known to Estonians as Balti Jaam is the central train station here in Tallinn. Just across the road from the station is the famous Balti Jaam Turg (Baltic Station Market), and inside this market is where our Nomad brewing project has made its temporary home.

But it’s not just the market fresh ingredients for brewing that draw us to Balti Jaam. For years we have been coming to eat street food, drink beer at the brew pub, and shop at the vendors. Gare Baltique is our humble homage to one of the best spots in Tallinn.

Gare Baltique was released for Humalafest 2026.

The Process

Gare Baltique starts with our house Saison recipe, a simple malt base of Pilsner and Wheat followed by a subtle addition of spicy, floral Hersbruker hops. We transfer directly to the barrel after cooling where the beer fully ferments out in a couple of days with a hardy saison yeast strain. After fermentation, the funky and sour characters of our house culture are able to develop over the coming weeks and months for an authentic farmhouse flavour.

Finally, in the days before transferring back to the fermenter, we added a final dry hop of Hersbruker for a fresh grassy and herbal note.

Food Pairings: A soft, creamy cheese, pate, or a fatty duck rillette.
