The Lore

It may not seem like it, but making an affordable, light, and easy drinking ale for summer that is also unique and exciting is actually quite the challenge for brewers. There is a delicate balance of ingredient selection to provide an intense burst of flavour and aroma without affecting the drinkability of a pint, and having people want to keep coming back for more.

So after much deliberation (and plenty of liquid research), the collective brewers of Humalakoda and Eternal Night came up with the recipe for Meetilk.

Meetilk was released for the 10th anniversary of Tallinn Craft Beer Weekend.

The Process

Inspired by a German style of Golden ale, Meetilk follows a traditionally simple grain bill of Pilsner and Wheat for a beer that pours a light straw colour. Hopping was kept low to keep bitterness subtle, as well as to not interfere with the aroma of adjuncts.

During the whirlpool, we added a healthy amount of South Estonian Hummelshof Honey from Saavaste & Loos. Finally, during the early stages of fermentation, we added fresh passionfruit juice for a tropical twist.

Altogether, the result is a semi-dry, crisp, and effervescent beer at 4.5% abv. Fruit, honey, and grain are all balanced well for a complexity of flavours while maintaining high drinkability.
