Tasting Notes
A funky farmhouse aroma, with notes of red wine, oak, and earthy, raw honey. Hersbruker hops lend some herbal and grassy flavours alongside a soft, late bitterness. Subtle hints of pear, citrus and pepper, finishing very dry with a smooth and balanced acidity.
The Lore
You might be surprised to find that Bob and Michael aren’t the only Australian brewers to have been dabbling in farmhouse ales in Estonia. Fellow Melbourne native, Ben, had spent some time in the wild east of Ida Virumaa and quickly fell in love with the landscape. He took the inspiration he found here and returned to Australia, making farmhouse brews under the name Ida Pruul.
The kinship between Ida Pruul and Eternal Night is not hard to see. 3 Australians making farmhouse style ales inspired by their love of the natural beauty of Estonia. Together we came up with the concept for what we call ‘The Antipodean Project’.
The Process
Metsik Sauvage is the first in this project, brewed at Humalakoda in Balti Jaam Turg, Tallinn. A bold and funky Super Saison, Metsik Sauvage is fermented in a former wine barrel with a mixed culture of diastatic saison yeast and wild yeast strains. Market fresh Estonian pears were blended into a puree and added directly to the barrel along with South Estonian Hummelshof Honey from our friends at Saavaste & Loos.
As a Super Saison, Metsik Sauvage comes in at 9% abv, a bottle is best shared with friends in the garden on a sunny afternoon.
For food pairings the brewers recommend – The sharpest cheese you can find, along with some peppery smoked sausage and salty pickles.
