Saison with Orange and Peppercorns

Strong citrus aroma and a complex blend of spices, with the classic funk of a Belgian farmhouse brew. The finish is dry and refreshing, with a subtle, lingering, peppery burn.
The Lore
A dream of brewing Saisons featured heavily in the inspiration to start a Nomad farmhouse brewing project in Estonia. After all, Saisons are possibly the truest expression of Belgian farmhouse brewing.
Poivré started life as one of a series of small experimental batches brewed at Humalakoda in Tallinn, mostly intended to test out different Belgian yeast varieties. We were impressed with the ‘peppery’ ester of this particular yeast strain and had the idea to exaggerate that character.
Poivré was released as an exclusive keg for our friends at Koht. Food Pairing - Grilled fish and potatoes, or a creamy cheese like Chevrè, Brie, or Gruyère.
The Process
For our first Saison brews, we kept our recipe as true to style as possible. A simple grain bill with only Pilsner and wheat, and a light hopping of German Hallertau Hersbruker hops for a touch of bitterness and a herbal, grassy aroma. Orange peel was added during the whirlpool for a twist of zesty citrus, accentuating the already fruity aroma of Safale BE-134 Saison yeast.
At the start of fermentation we added a blend of five peppercorns (white, black, green, pink, and kampot) sourced from the Balti Jaam Market, lightly crushed to release flavour and aroma into the beer throughout the fermentation process.
Technically falling into the ‘Super Saison’ category with an abv of 7.5%, Poivré pours a straw to orange hue and presents a strong citrus aroma and a complex blend of spices.
