The Lore

The debut beer released by Eternal Night, Silence was made to set the bar for what drinkers could expect from our project.

We understood the importance of making a good impression with our first appearance, giving people a beer they could be excited about while also forging our own brewing style.

The idea was a fortified, yet highly drinkable, Imperial Stout made with Belgian chocolate, cinnamon, and cloves. Silence is a robust, full flavoured Imperial Stout that can easily be enjoyed in a pint, have you coming back for a second, and, if you’re brave, maybe a third.

The Process

The grain bill is made up of British Marris Otter pale malts and a selection of German grown Crystal and Carafa varieties for a deep black appearance. Flavours of espresso and biscuit are rounded out with a subtle roasty bitterness. The stout tends towards a drier finish, with flaked oats providing a soft, velvety mouthfeel.

Belgian Milk Chocolate added directly to the boil gives the beer a slightly creamy and fatty texture and imparts a rich chocolatey sweetness.

We chose a strong Belgian yeast similar to that often found in Abbey or Trappist style beers, keeping fermentation at a low temperature to limit the production of intense fruity esters while encouraging a subtle Belgian funk and aromas of raisin and dark fruits. During maturation, the beer was aged on cinnamon and clove for a subtle hint of winter spices.
