Vibrant white grape and cantaloupe. Gentle Belgian banana. A final punch of citrus and red berries. Soft, velvety mouthfeel with a balanced, easy-drinking finish.
The Lore
There's no secret as to why Eternal Night chose Humalakoda as the priority for our first Nomad beers. Humalakoda has been one of Tallinn's best brew pubs for close to a decade, and we've been here to drink every beer.
It only made sense that we would choose a brewer we so intimately knew and respected to take on such a task as helping us brew our debut beers. It follows then, that Bob, having already brewed with JK while working at Põhjala, would work together again on multiple projects.
The first of these projects, and the first of our collaboration brews ever served on tap, is Vaim. Translating as “Ghost” or “Spirit”, Vaim is what we are referring to as a White IPA. Given the trends of the US West Coast or New England IPA; the Australian or New Zealand IPA; and of course the classic English IPA; We were determined to brew an IPA for Continental Europe.
The Process
The malt bill contained a hefty 50% of Finnish wheat malt for a hazy appearance and a soft, velvety mouthfeel. A light boil hop gives a little kick of bitterness to differentiate this beer from a NEIPA, as well as a heavy whirlpool hopping of German Hallertauer Blanc and Hüell Melon for a vibrant white grape and cantaloupe aroma.
Belgian yeast fermented at low temperatures imparted a gentle banana character before the beer was finally dry hopped with German Callista for a punch of citrus and red berries.
Weighing in at 6.5% abv, Vaim balances body and drinkability, bitterness and sweetness, as well as fruits and grains for a well rounded easy drinking terrace beer.
